It’s no surprise that Biscoff continues to be the top-requested flavor with clients—it’s nostalgic, spiced just right, and pairs beautifully with silky buttercream. One of my favorite cake styles to make is the “millionaire” cake—these cakes allow for maximum creativity, from the layering and textures to the flavor pairings and artistic finishes. They're the perfect playground for both technique and imagination.
When Direction Is Clear: The Bigger the Cake, the Stricter the Specs
On the flip side, larger format cakes—like half-sheets—tend to come with more specific client direction, which can limit the flavor or design experimentation. These cakes are often made for bigger celebrations, and the focus shifts toward clean execution and visual appeal. In those cases, the creative energy goes into the dΓ©cor, and I turn to some of my favorite content creators for inspiration. Skill Building: Piping Level Unlocked
This year, I had the chance to level up my cake decorating game by taking a hands-on workshop at The Sweet Spot—and it was truly a piping glow-up! I dove deep into classic piping techniques that add timeless elegance to any cake.
We covered the fundamentals, like shell borders, drop strings, ruffles, and more—all the beautiful old-school piping styles that are making a major comeback. These techniques gave me a fresh way to elevate even the simplest of cakes with just a piping bag and a bit of patience.
Now, my cakes are finished with delicate touches like pearl borders, ribbon accents, and ornate frames that give each creation a refined, custom look. Whether it’s a vintage-inspired celebration cake or a bold, modern design with classic flair, the piping techniques I learned have become my new favorite way to add texture, depth, and artistry.
