Last of the Summer Birthday Cakes: Tres Leches, Coconut Cream, and a Hostess Cupcake Cake

Birthdays are like sprinkles—there’s no such thing as too many, and they make life sweeter. This summer wrapped up with three very different (but equally delicious) cakes leaving my kitchen: a Gluten Free Tres Leches, a Coconut Cream Cake, and a Hostess Cupcake Cake. Each one came with its own story, flavor adventure, and honestly, that’s why I adore baking custom cakes—every one comes with its own challenge, and its own little piece of happiness.

Gluten Free Tres Leches Cake

When a client told me the one cake he missed most after going gluten free was Tres Leches, I knew it was time to try something new. This was my very first attempt at making a gluten free version of this iconic dessert, and let me tell you—I had way too much fun.

I followed this recipe as my guide, and what I loved most was watching the sponge cake do its magic. The moment it soaked up that glorious trio of milks (evaporated, condensed, and heavy cream), it felt like science and art in one pan. I may or may not have rewarded myself with three spoonfuls of the homemade whipped cream topping. (Professional quality control, right?)

So, what makes tres leches so special? It’s a sponge that acts like a milk sponge—light and airy, yet somehow rich and custardy at the same time. The cake melts in your mouth, the cream adds a silky finish, and it’s one of those desserts that feels celebratory without even trying.

And the best part? Gluten free doesn’t mean missing out anymore. I love that more and more customers are asking for gluten free cakes, because it challenges me to explore classics in new ways. From cinnamon rolls to keto-friendly treats, it’s all about making sure everyone gets their slice of joy.

Coconut Cream Cake

This cake came together thanks to a last-minute phone call from my friend’s sister. She wanted her boyfriend’s favorite cake for his birthday. And how committed was she? She went straight to his ex-wife for the recipe! (Now that’s teamwork.)

A Coconut Cream Cake can be both indulgent and comforting—soft sponge, velvety custard, and frosting that makes each bite feel like a treat. He was thrilled, but the true mark of success? Even someone who swears off sugar couldn’t pass it up. That’s when you know the cake did its job.

Hostess Cupcake Cake

To wrap up the summer birthday lineup, one customer asked me to make her childhood favorite come to life: a Hostess Cupcake Cake. After celebrating her mom and daughter with custom orders, it was her turn for something fun. This cake came together as layers of rich chocolate, fluffy marshmallow buttercream, and a ganache topping so shiny it practically winked at you. A little retro, a little decadent, and a lot of fun.
